Simple Individual Blueberry Pastry

Last month, I was getting down to the bear parts of my pantry and had to come up with a new recipe on the spot. This is something I am quite good at. I had been given a large bag of blueberries and several frozen rolled pie crusts from a friend. These were my ingredients of choice to create this scrumptious breakfast dish.

Ingredients For Individual Blueberry Pastry


I am not quite sure what to call this treat. It was made for the purpose of being a breakfast pastry. It only took a few ingredients. 

-frozen rolled pie crusts
-2 cups of blueberries
-1/2 cup of sugar
-8 0z cream cheese
-butter for brushing the crust

How to Make the Dessert

I placed the cream cheese, blueberries and sugar in a food processor. Since I have a small one, I had to put half and half in the processor to mix it all up. I blended until it was fully combined. 

Once I blended the middle parts, I rolled out the pie crust and cut in four slices. I put about 1/4 of a cup of the mixture in the center. 


After I filled the centers of the dough with filling, I closed them up for baking. I brought two sides up together, and then the third side to join them. With wet fingers, I pinched the seems closed. 


After I pinched the dough together, I brushed the pastry with melted butter. I baked it in the oven at 400 degrees for 20 minutes. Be sure to keep an eye on it so it doesn't burn. 


My family really enjoyed this recipe. I also did a cream cheese cinnamon version of this recipe.
